MONDAY MEAL : BANANA WRAP IT!

If there is any way to to satisfy my taste buds, its by placing fish (of any type)  and coriander in the same mouthful!. Whether it being coriander mixed through guacamole, coriander freshly chopped in a salad, used to garnish baked vegetables or coriander used to stuff chicken. These when used together are my tauvel & dean, William & Kate or European summer on a beach …for me they just work that well together!

BUT for quite a few, I have discovered, coriander is not as favoured. SO for those who fit in this category.. I apologise for this MONDAY MEAL! 🙂

A very summer dish, local to many tropical countries, is cooking fish whilst wrapped in a banana leaf. I decided to make a Thai/Philippine Inspired dinner last week – papaya salad, and BBQ’d Barramundi and Salmon. This was accompanied by fried rice, steamed Choco and some other yummie side dishes.

FISH MARINADE INGREDIENTS

– Fish Sauce – 2 tablespoons

– Soy Sauce – 1/4 cup

– Fresh Grated Ginger – amount decided by you – I dont like to overload but about 1/4- 1/2 cup all grated depending on how much fish you are marinading/cooking

– Lots of lime Juice – I would use up to 4 limes

– table spoon Ketchap Menis (ABC sweet soy sauce)

– A few slithers of fresh chilli ( 1/4 – 1/2 fresh chilli – depending on your level of risk! 🙂 )

– LOTS of fresh chopped coriander (Bunch fulls!)

– Banana Leaves from the local fruit and Veg store

2 tbsp Sesame oil

METHOD

– Mix all the ingredient and pour over fish – allow to sit minimum 1-2hrs – the longer the more the taste is absorbed into raw the fish into a flat piece of banana leaf – approx 40cm long by 20cm Wide to allow you to wrap.

– This can be tricky, as you want to keep all the sauce wrapped up but the leaf may crack SO best to let the leaf sit in warm water for about 30mins before you do this all – this will allow the leaf to be more flexible when wrapping!

– use timber skewers or toothpicks to hold in place.

– BBQ those babies! – AMAZING

PAPAYA SALAD INGREDIENTS

– Fresh green papaya

– Fresh Carrot

– Raw unsalted peanuts

– freshly sliced red chilli

– Bean sprouts

– Coriander

– 1 Tbsp fish sauce

– 3 Tbsp Lime Juice

– 2 tbsp Sesame oil – YUM!

METHOD

– Stir all the ‘Dressing’ Ingredients together – juice, oil, fish sauce etc

– Remove the skin from the green papaya – If you have a slicer place the raw carrot and papaya  to get a thinly sliced shredded salad – This process will be MUCH EASIER AND QUICKER if you have a shredder!

– Place the shredded vegetables, chilli, and bean shoots in a bowl, mix

– Pour the fresh peanuts over and cover with dressing!

– DEVOUR!
