MONDAY MEAL: Make it Moroccan

I wanted to share some of my favorite Moroccan meals with you.. There is nothing as easy yet successful as a Moroccan themed meal. Cous Cous a great salad and a poultry dish of choice.. add hummus, some zaatar spice and olive oil…and you can’t get better!

CHOSEN RECIPE’S

1.MOROCCAN COUS COUS

2.CHICKEN MINCE STUFFED EGGPLANT

Moroccan Cous Cous

Ingredients:

– Cous Cous (1 – 2 cup based on number of people)

– pitted prunes and/dates (1 Cup)

– Roast pumpkin/sweet potato/zucchini

– handful/largebunch of Parsley and/coriander

– handful of fresh pomegranate

– Spices – Zaatar, Turmeric, ground cinnamon, cumin.

METHOD:

– Cook prunes/dates with spices and 2 tablespoons of water in a small saucepan, add a teaspoon of each spice to the mix.

– Cook the Cous Cous

– Stir the cooked roasted pumpkin/sweet potato/pumpkin AND the prune/date mixture into the cous cous

– Add the parsley and/coriander to the cous cous.

Easy and YUMO

CHICKEN MINCE STUFFED EGGPLANT

Ingredients

– Chicken Mince

– Cumin, Zaatar, Turmeric

– 2 Small Eggplants

– Coriander

METHOD

– Slice the eggplants in half and Scoop the meat from the eggplant

– oil the empty eggplants and place skin side down in the oven for approx 15-20 minutes/until browned and tender.

– Cook the minced chicken add a teaspoon of each of the spices in the list above.

– add the eggplant meat to the mince chicken and cook entirely until it all becomes a soft mixture.

– Take the empty eggplants from the oven and scoop the mince mixture into the eggplants.

– Place back in to the oven for another 15/20 minutes or until fully cooked and juicy

ADD A heap of hummus and sprinkle with zaatar and coriander ENJOY!
